##Stir the mand mand and wasabi until smooth. Season with salt. Wash ##cucumber##, halve lengthwise, remove seeds and dice very finely.
For the tartare, rinse fresh salmon and pat dry. Dice fresh and smoked salmon very finely. Peel and finely dice the shallots. Squeeze lime. Mix everything and season with salt and pepper.
Divide into glasses and keep covered and cool until serving. Then add a blob of wasabi cream and cucumber caviar to each glass.
