Wash the orange, rub dry and peel thinly with a zest ripper. Squeeze the fruit. Mix vinegar, orange juice, salt, pepper and sugar. Add 4 tablespoons of oil.
Wash and clean the tomatoes, cut them into slices and distribute them on 4 plates. Drizzle with vinaigrette and sprinkle with coarse pepper. Wash the salmon, dab dry, salt. Heat 1 tablespoon of oil in a frying pan and fry the salmon for about 5 minutes while turning.
Clean, wash and dry the rocket leaves. Arrange the salmon on the plates, add the rocket, drizzle with vinaigrette and sprinkle with orange zest. Serve with baguette bread.
