Salmon in crispy crust

Ingredients

Servings: 4
  • 1.2 kg mealy
  • 7-10 Tbsp Potatoes
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Nutmeg
  • 1 medium onion
  • 600 g Salmon fillet
  • 2 Eggs
  • 100 g Oatmeal
  • 2-3 TABLESPOONS Oil
  • 1/2 bunch Parsley
  • 1/4 l Milk
  • 1-2 TABLESPOONS butter/margarine
  • 7-10 Tbsp Organic Lemon

Directions

    Peel and wash the potatoes and cut them into large pieces. Cook in salted water for about 20 minutes

    Peel onion and cut into rings. Wash the salmon, dab dry and cut into approx. 3 cm wide strips

    Whisk the eggs with a little salt and pepper. Turn salmon first in the egg and then in oatmeal. Press the breadcrumbs well

    Heat the oil in a large frying pan. Fry the onion in it until golden brown, take it out. Fry salmon in hot frying fat for 3-4 minutes on each side until crispy

    Wash and chop the parsley. Drain potatoes to 3-4 tablespoons of cooking water. Add milk and fat, crush everything finely. Season to taste with salt, pepper and nutmeg. Stir in parsley. Arrange salmon with mashed potatoes and fried onions. Garnish with lemon slices. Cucumber salad tastes good with it
