Roasted pork filet with apple

Ingredients

  • 1/4 l apple juice
  • 7-10 Tbsp Salt
  • 200 g Long grain rice
  • 500 g Pork tenderloin
  • 2 (approx. 300 g) Apples
  • 2 TABLESPOONS Oil
  • 1 TEASPOON Sweet peppers
  • 1 TEASPOON dried thyme
  • 1/2 TEASPOON ground sage
  • 100 g Walnut kernels
  • 1 TEASPOON Cornstarch

Directions

    Bring 150 ml apple juice, 1/4 l water and some salt to the boil in a saucepan. Add rice and let it swell at low heat for about 20 minutes. In the meantime wash pork, dab dry and cut into thin strips. Wash apples thoroughly, quarter and core them. Cut the flesh into slices. Heat oil in a wok or frying pan. Fry the meat for approx. 5 minutes while turning.

    Season with salt, paprika, thyme and sage. Add apple slices and fry for 3 minutes. Coarsely chop the walnut kernels and add. Stir the remaining apple juice and starch until smooth. Pour into the wok and simmer for 1-2 minutes. Season to taste again. Add rice extra
