Roast beef with radish vegetables

Ingredients

  • 600 g roast beef, salt, pepper
  • 1 TABLESPOON clarified butter
  • 1 collar Spring onions
  • 2 Federation Radishes
  • 1-2 oranges, 2 tablespoons oil
  • 1/2 TEASPOON Vegetable broth
  • 1/2 bunch parsley, aluminium foil

Directions

    Preheat oven (electric cooker: 225 °C/circulating air: 200 °C/gas: level 4). Wash meat, dab dry. Cut into the fat layer. Rub the meat with salt and pepper. Fry in hot clarified butter with the fat layer down. Turn and roast in the oven for about 25 minutes

    Clean and wash spring onions and radishes, put small radish leaves aside. Cut onions into pieces. Cut radishes in half if necessary. Squeeze oranges, measure 1/8 l juice

    Remove the roast beef, wrap it in aluminium foil and let it rest for about 5 minutes. Sauté spring onions in hot oil. Add orange juice, bring to the boil, stir in stock. Add radishes and cook everything for about 1 minute. Season to taste with salt and pepper

    Wash and chop parsley and radish leaves. Remove the fat layer from the roast beef, cut the meat into slices. Arrange with vegetables and sprinkle with parsley and radish leaves. Goes well with fried potatoes
