Rice with fish cubes and vegetables (diabetics)

Ingredients

  • 7-10 Tbsp Salt
  • 45 g Long grain rice
  • 200 g Cod fillet
  • 1 TABLESPOON fresh squeezed lemon juice
  • 1 (20 g) small peeled onion
  • 150 g cleaned broccoli
  • 1-2 stem(s) Thyme
  • 1 tablespoon (10 g) Oil
  • 50 g cleaned tomato
  • 1 teaspoonful of vegetable stock (instant)
  • 7-10 Tbsp freshly ground white pepper
  • 7-10 Tbsp Lemon wheels and parsley

Directions

    Bring 100 ml salted water to the boil in a small pot. Add rice, bring to the boil and let it swell at low heat for about 20 minutes. In the meantime, wash the fish, dab dry with kitchen paper and sprinkle with lemon juice. Cut broccoli into florets and cook covered in little boiling salted water for 8-10 minutes. Drain and let drain well. Wash the thyme, dab dry and pluck the leaves from the stalks.

    Heat the oil in a pan. Dab fish dry, season with salt and fry in hot oil for 5-6 minutes while turning. Dice onion, cut tomato into slices. Add to the fish with the thyme and fry briefly while turning. Add rice and broccoli, season with stock and a little salt and pepper. Garnish with lemon wheels and parsley as desired
