Bring the milk, vanilla sugar, lemon zest and salt to the boil while stirring. Add rice and let it swell covered at low heat for about 20 minutes. remove lemon peel, let rice cool down
Wash, clean and halve or quarter the strawberries. Stir yoghurt into the rice. Fill 3/4 strawberries and rice into a bowl, arrange remaining strawberries on top. Mix sugar and cinnamon and sprinkle over it. Decorate with lemon balm
