Ingredients

  • 1 small head red cabbage (about 1 kg)
  • 2 Onions
  • 2 TABLESPOONS Goose fat or clarified butter
  • 1 Bay leaf
  • 1 TEASPOON Juniper berries
  • 1 Cinnamon stick
  • 200 ml dry red wine
  • 6-10 Tbsp Cider vinegar
  • 7-10 Tbsp Salt
  • 3 TABLESPOONS Sugar
  • 1 Apples
  • 200 g Currant Jelly

Directions

    Clean the red cabbage, quarter it and cut out the stalk. Cut the cabbage into fine strips. Peel onions and cut into strips. Heat the fat in a pot and fry the onions until transparent.

    Add red cabbage, bay leaf, juniper berries, cinnamon stick and red wine. Season with vinegar, salt and sugar. Bring to the boil and simmer for 45-60 minutes. Peel apple, quarter it, remove core, cut pulp into pieces and add to red cabbage. 10 minutes before the end of the cooking time stir in currant jelly
