Beat butter, vanilla sugar and sugar with the whisk of the hand mixer until foamy. Separate the eggs, stir in the egg yolks one by one. Stir in the quark as well.
Mix flour, baking powder and 1 pinch of salt, stir alternately with 75 ml mineral water into the dough. Beat the egg whites with the whisk of the hand mixer until stiff and fold into the dough.
Preheat waffle iron, bake approx. 2 tbsp. of dough per waffle for 3-4 minutes each. Let cool down briefly and dust with icing sugar.
