  • 150 g Rusk
  • 100 g Sugar
  • 75 g liquid butter or
  • 7-10 Tbsp Margarine
  • 1 package Citro-back
  • 1 package Vanillin sugar

  • 5 Eggs (size M)

  • 7-10 Tbsp grated peel of 1 untreated orange
  • 1 kg Low-fat curd
  • 2 packages Pudding powder
  • 7-10 Tbsp "Vanilla flavored"
  • 7-10 Tbsp (for 1/2 l milk each; for boiling)
  • 200 g Whipped cream
  • 1 can(s) (425 ml) Fruit-
  • 7-10 Tbsp Cocktail
  • 1 can(s) (425 ml) Apricots
  • 100 g Grapes
  • 1/2 package clearer
  • 7-10 Tbsp Cake glaze
  • 20 g Pistachio kernels

Directions

    Crumble the rusks very finely. Put them in a bowl and mix with sugar, fat, citro-back and vanillin sugar. Line the bottom of a springform pan (26 cm Ø) with baking paper and press the crumbs firmly onto the bottom. For the quark mixture, beat eggs, sugar, vanillin sugar and orange zest with the whisk of the hand mixer until foamy. Stir in the quark and pudding powder.

    Whip cream until stiff and fold in. Spread the quark mixture on the rusk base and smooth it down. Bake in the preheated oven (electric cooker: 150 °C/ gas: level 1) for about 2 hours. Let it cool down in the oven for at least 3 hours (do not open the oven door!). Remove the cake from the tin. Drain the fruit cocktail and apricots on a sieve, collecting the juice. Measure out 1/8 litre. Wash the grapes and pluck them from the stems. Cover the cake with the drained fruit and the grapes. Prepare the cake glaze with the measured juice according to the package instructions and cover the fruits with it.
