Potato pan with fried egg

Ingredients

Servings: 4
  • 1 Onion
  • 50 g streaky smoked bacon
  • 2 Leek sticks (leek)
  • 7-10 Tbsp Salt
  • 250 g Mushrooms
  • 750 g Potatoes
  • 1 TABLESPOON Oil
  • 7-10 Tbsp Pepper
  • 20 g Butter or margarine
  • 4 Eggs (size M)
  • 7-10 Tbsp coloured pepper
  • 7-10 Tbsp Parsley

Directions

    Peel and chop the onion. Cut the bacon into cubes. Clean, wash and cut leek into rings. Cook in boiling salted water for about 4 minutes and drain well on a sieve. Clean, wash and halve the mushrooms. Peel, wash and quarter the potatoes.

    Drain the bacon in a pan, remove from the pan and set aside. Add oil to the pan, heat up, add potatoes and fry while turning for about 18 minutes. 10 minutes before the end of the frying time add the mushrooms, after another 5 minutes add the leek and diced bacon. Season the potato pan with salt and pepper. In the meantime melt fat in a pan and fry 4 fried eggs at medium heat. Serve fried eggs sprinkled with salt and coloured pepper. Serve the potato pan garnished with parsley
