Poached Kasseler with vegetables

Ingredients

  • 4 TABLESPOONS clear broth (instant)
  • 500 g baby potatoes
  • 3 medium-sized carrots
  • 1 (approx. 750 g) Cauliflower
  • 1 collar Spring onions
  • 100 g Whipped cream
  • 2 tablespoons (30 g) Flour
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 80 g small mushrooms
  • 1 TABLESPOON Oil
  • 1/2 Bd. chives
  • 1-2 TEASPOONS Horseradish (glass)
  • 1 TABLESPOON pink berries

Directions

    Simmer the smoked pork in 2 1/2 l water covered with broth for approx. 1 hour

    In the meantime peel or clean and wash the potatoes and vegetables. Cut carrots into slices. Divide cauliflower into florets. Cut spring onions into long pieces

    After approx. 30 minutes cooking time, remove a good 1/2 l of the pork broth and bring to the boil. Cook cabbage and potatoes for 15-20 minutes. Add carrots and onions and cook for about 10 minutes

    Lift out the vegetables, keep warm, bring the stock to the boil. Mix cream and flour. Stir into the stock, bring to the boil. Simmer for about 5 minutes, season to taste

    Wash the mushrooms, dab dry. Fry in oil. Pour half the sauce. Season. Wash the chives and cut into small rolls. Stir horseradish into the rest of the sauce. Arrange everything, sprinkle with pink berries if necessary
