Plum wholemeal cake

Ingredients

  • 400 g purple prunes
  • 75 g Dark chocolate
  • 175 g Butter or margarine
  • 100 g demerara sugar
  • 3 Eggs (size M)
  • 175 g Whole-wheat flour
  • 175 g crushed almonds
  • 2 TEASPOONS Baking Powder
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Flour and fat

Directions

    Wash, halve and stone the plums. Cut about 1/3 of the plums into thin slices, dice the remaining plums. Chop the chocolate finely.

    Cream fat and sugar. Stir in the eggs one by one. Mix flour, almonds and baking powder in a bowl and stir in. Fold in chopped chocolate and plum cubes. Pour the dough into a greased and floured springform pan (approx. 26 cm Ø).

    Spread the plum wedges on the dough and bake in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for 30-40 minutes (stick test).

    Remove the cake from the oven and let it cool down on a cake rack. Dust the cake with icing sugar before serving.
