  • 250 g Low-fat curd
  • 250 g Mascarpone
  • 75 g Sugar
  • 100 ml Coconut milk (canned)
  • 100 ml Pineapple juice
  • 20 g Coconut chips
  • 1 Baby pineapple
  • 4 Emperor cherries to decorate

    Mix the low-fat curd, mascarpone, sugar, coconut milk and pineapple juice well. Roast the coconut chips in a pan without fat until golden brown, take them out and let them cool down. Cut baby pineapple into slices. Pour cream into dessert bowls, decorate with pineapple slices, coconut chips and emperor cherries
