Ingredients

  • 400 g Almonds
  • 250 g Icing sugar
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 2 Eggs (size M)
  • 1/2 TEASPOON Cinnamon
  • 1 Egg yolk (size M)
  • 1 TABLESPOON Whipped cream
  • 200 g Pine nuts
  • 50 g flaked almonds
  • baking paper

Directions

    Finely grind the almonds in the universal chopper. Mix icing sugar, vanillin sugar, salt and eggs with the whisk of the hand mixer until the sugar is dissolved. Knead in ground almonds and cinnamon with the dough hooks of the hand mixer.

    Whisk the egg yolk and cream. Form walnut-sized balls from the dough. Turn 2/3 of the balls first in whisked egg yolk, then in pine nuts (if necessary press them down a little). Turn the remaining balls in egg yolk and then in flaked almonds.

    Place on two baking trays lined with baking paper. Bake the trays one after the other in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 8-10 minutes. Remove from the oven, place on a rack and allow to cool.
