Pies with broccoli-casseler ragout

Ingredients

Servings: 4
  • 250 g broccoli, salt
  • 1 medium onion
  • 150 g small mushrooms
  • 4 Puff pastry pies (approx. 25 g each)
  • 2 tablespoons (30 g) butter/margarine
  • 200 g tripped chop of Kasseler
  • 1 (20 g) go. Tbsp. flour
  • 75-100 g Whipped cream
  • 7-10 Tbsp Pepper, some lemon juice

Directions

    Clean and wash broccoli and cut into florets. Cover and cook in approx. 400 ml boiling salted water for approx. 5 minutes. Drain, catch the vegetable water

    Peel and finely chop the onion. Clean the mushrooms, wash if necessary, cut in half. Bake the pies in a hot oven (200 °C/circulating air: 175 °C/gas: level 3) for approx. 8 minutes

    Heat the fat. Sauté onion in it until transparent. Add the mushrooms and fry well. Dice smoked pork, add to the mushrooms and fry for approx. 3 minutes

    Sprinkle flour over it and sweat it. Stir in vegetable water and cream, bring to the boil. Cover and simmer for about 5 minutes. Fold in broccoli and heat up. Season to taste. Arrange pies and fill with the Kasseler ragout

    If you like, you can replace 100 ml vegetable water with white wine for the sauce
