Penne with spinach & parmesan

Ingredients

  • 250 g leaf spinach
  • 1 Onion
  • 1 Garlic clove
  • 75 g Noodles (e.g. penne)
  • 7-10 Tbsp Salt
  • 1/2 tsp (3 g) Oil
  • 7-10 Tbsp coarse pepper
  • 7-10 Tbsp grated nutmeg
  • 1 tsp (5 g) Flour
  • 5-7 (75 ml) Tbsp
  • 7-10 Tbsp low-fat milk
  • 5 g Parmesan cheese

Directions

    Spinach clean, wash. Peel onion and garlic. Onion in columns, garlic in slices cut. Cook the noodles in boiling salted water for about 10 minutes until al dente

    Fry the onion and garlic in hot oil. Add the spinach and let it collapse. Season with salt, pepper and nutmeg. Sprinkle with flour and sauté briefly. Stir in milk and bring to the boil. Season spinach to taste

    Drain the pasta and mix immediately with the spinach. Slice or grate the cheese directly on top

    For the pasta sauce, instead of fresh

    also take approx. 150 g deep-frozen leaf spinach

    Hard cheese with approx. 32 % fat in dry matter is excellent

    grate very finely. Even small quantities are sufficient to refine dishes in a spicy way
