Pear pancakes with bacon

Ingredients

Servings: 4
  • 4 eggs (Gr. M), salt
  • 1/4 l Milk
  • 200 g Flour
  • 1/2 TEASPOON Baking Powder
  • 2 ripe pears (about 200 g each)
  • 75 g streaky smoked bacon
  • 4 TABLESPOONS Cranberries (glass)
  • 7-10 Tbsp Parsley z. Garnish

Directions

    Separate eggs. Mix the egg yolks, 1 pinch of salt, milk, flour and baking powder until smooth. Let the dough swell for about 10 minutes. In the meantime peel, quarter, core and cut pears into slices. Cut bacon into thin slices

    Leave the bacon in a coated pan (approx. 24 cm Ø) until crispy, remove and collect the bacon fat in a small bowl (results in approx. 4 teaspoons of fat). Beat the egg white until stiff and fold into the pancake batter

    Heat 1 tsp. bacon fat in a frying pan. Add 1/4 of the pancake batter and spread 1/4 pear wedges on top. Bake the pancake on each side for 3-4 minutes until golden brown, keep warm. Also bake 3 more pancakes

    Arrange the pancakes with 1/4 of the bacon slices and 1 tablespoon cranberries. Garnish with parsley if desired
