Peel and chop the onions and garlic. Cut the sausage into small pieces. Peel, wash and roughly dice the potatoes
Heat olive oil in a roasting pan. Fry the sausage, onions and garlic thoroughly. Add potatoes and fry briefly. Stir in 1/2 l water and stock and bring to the boil. Cover and simmer at medium heat for about 15 minutes. Cook open for about 10 minutes more.
Wash and finely chop the parsley. Season potatoes with pepper and sprinkle with parsley
