Pasta with cherry tomatoes and olives

Ingredients

Servings: 4
  • 150 g streaky smoked bacon
  • 2 Onions
  • 1 Garlic clove
  • 1 red chilli pepper
  • 300 g cherry tomatoes
  • 20 g Pine nuts
  • 400 g Fusili noodles
  • 7-10 Tbsp Salt
  • 1 TABLESPOON Olive oil
  • 100 ml Vegetable broth
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 25 g black olives without stone
  • 4 Stem(s) Basil

Directions

    Cut the bacon into fine strips. Peel and finely dice onions. Peel garlic clove and cut into thin slices. Clean the chilli, cut lengthwise, wash and remove seeds. Wash cherry tomatoes, grate dry and cut in half. Roast pine nuts in a pan without fat for 3-4 minutes until golden brown. Take out and let cool down. Prepare pasta in boiling salted water according to package instructions

    In the meantime heat oil in a pot. Fry the bacon for 2-3 minutes. Add onions, garlic and chili and fry for about 2 minutes. Add tomatoes and stock, bring to the boil, season with salt, pepper and sugar and simmer for about 4 minutes. Add the olives at the end

    Wash the basil and shake dry. Pluck the leaves from the stems. Drain the pasta and mix with the sauce. Mix in pine nuts. Arrange the pasta on plates and garnish with basil
