Ingredients

  • 5 Eggs (Gr. M)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 pinch Sugar
  • 175 g (30 g) + 2 tablespoons flour
  • 1 knife tip Baking Powder
  • 200 ml + 1/8 l milk
  • 175 ml Mineral water
  • 300 g Carrots
  • 500 g Broccoli
  • 1 medium onion
  • 2 TABLESPOONS Sesame
  • 2 TABLESPOONS clarified butter
  • 6 discs (40 g each) Gouda
  • 5 discs (35 g each) cooked ham
  • 1 TABLESPOON butter/margarine
  • 2-3 TABLESPOONS Fresh cream

Directions

    Beat the eggs and 1 pinch of salt until frothy. Mix 175 g flour and baking powder, stir in. Stir in 200 ml milk and mineral water. Leave to swell for about 10 minutes

    Clean or peel and wash the vegetables. Cut into slices or cut into florets. Peel and chop onion

    Stir the sesame seeds into the dough. Heat the clarified butter in portions in a pan (24 cm Ø). Bake about 1 1 pancakes from the dough one after the other. Layer the pancakes, cheese and ham alternately, finish with cheese

    Bake the pancake tower in a hot oven (electric cooker: 200 °C/ circulating air: 175 °C/ gas: level 3) for approx. 12 minutes

    In the meantime, cover the vegetables and cook them in 1/2 l salted water for about 8 minutes. Drain, collect the cooking water. Sauté onion in fat. Brown 2 tbsp. flour in it. Stir in cooking water and 1/8 l milk. Bring to the boil and simmer for about 5 minutes. Heat vegetables in it, season to taste. Stir in crème fraiche. Serve everything
