Put the baking mix and 325 ml of lukewarm water into a mixing bowl. Knead with the dough hooks of the hand mixer at the highest setting for approx. 3 minutes until a smooth dough is formed. Cover the dough and let it rise in a warm place for about 30 minutes. In the meantime, finely dice the bacon and drain in a pan without fat. Put it on kitchen paper and let it drip off. Put the dough on a floured work surface, knead bacon and onions with floured hands. Form dough into a roll (approx. 35 cm long) and cut into 10 pieces of the same size.
Shape it into 10 rolls and place them on a baking tray lined with baking paper. Score the rolls as you like with the back of a knife. Let the rolls rise again in a warm place for about 20 minutes. Then bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 20 minutes. Take the rolls out of the oven and let them cool down on a grid.
