Omelette with goat cheese and walnuts

Ingredients

Servings: 4
  • 2 red onions
  • 1/2 bunch Spring onions
  • 1 (200 g) Roll of soft goat cheese
  • 8 Eggs (size M)
  • 50 g Whipped cream
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 50 g Walnut kernels
  • 3 TSP Oil
  • 7-10 Tbsp Maple syrup

Directions

    Peel onions and cut them into rings. Clean and wash spring onions and cut into rings. Cut goat cheese into 8 slices. Mix eggs and cream, season with salt and pepper

    Roast the walnuts in a coated pan (approx. 14 cm Ø) and remove them. Heat 1 teaspoon of oil in it, fry onions and spring onions in portions and take them out

    Heat 1/2 teaspoon of oil in a frying pan, add 1/4 of the egg mixture and let it simmer at low to medium heat for about 5 minutes, remove. Spread 1/4 of the onion mixture and 2 slices of goat cheese on one half of the omelette, fold over and keep warm. Do the same with the remaining oil, egg mixture, onion mixture and goat cheese. Put the omelettes on 4 plates. Spread walnuts on top and sprinkle with syrup as desired
