Noodles with Greek sauce

Ingredients

  • 3 small onions
  • 1 Garlic clove
  • 3 medium zucchini
  • 1 package (500 g) chunky tomatoes
  • 250 g Noodles (e.g. Farfalle)
  • 1 TABLESPOON Olive oil
  • 4 Stem(s) Thyme
  • 1 TEASPOON Instant vegetable stock
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 100 g Whipped cream
  • 200 g Feta cheese

Directions

    Onions peel and in fine cubes cut. Peel garlic and chop finely. Wash and clean the zucchini and cut them into sticks of about 3 cm length. Drain the tomatoes in a sieve. Prepare pasta in boiling salted water according to package instructions.

    Heat the oil and sauté the onions. Pluck thyme leaves from 2 stems. Add tomatoes, thyme leaves and garlic. Season to taste with vegetable stock, salt and pepper. Add cream and bring to the boil. Add zucchini sticks and let simmer for another 3-4 minutes at low heat. Drain the pasta. Cut feta cheese into cubes. Bring the sauce to the boil again and dilute with drained tomato stock if necessary.
