Noodles with asparagus and salmon

Ingredients

  • 750 g green asparagus
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Sugar
  • 400 g Salmon fillet
  • 7-10 Tbsp juice of 1/2 lemon
  • 30 g Butter or margarine
  • 7-10 Tbsp Pepper
  • 400 g ribbon noodles
  • 1 Onion
  • 30 g Flour
  • 100 ml White wine
  • 100 g Whipped cream
  • 7-10 Tbsp Lemon slices

Directions

    Clean and wash the asparagus and remove the woody ends. Cut asparagus diagonally into pieces. Bring salted water and a pinch of sugar to the boil. Add the asparagus and cook for about 5 minutes. Drain on a sieve.

    Collect the asparagus water and measure 1/4 litre. Wash the salmon, dab dry and cut into cubes. Sprinkle with lemon juice. Heat the fat in a frying pan and fry the salmon cubes all around for 6-8 minutes at medium heat. Season with salt and pepper. Remove from the pan and keep warm. Cook the pasta in boiling salted water for about 5 minutes. Meanwhile peel and finely dice the onion, add it to the frying fat, dust with flour and sauté. While stirring, deglaze with white wine, asparagus water and cream and bring to the boil. Season to taste with salt and pepper.

    Remove from the pan and keep warm. Cook the pasta in boiling salted water for about 5 minutes. Meanwhile peel and finely dice the onion, add it to the frying fat, dust with flour and sauté. While stirring, deglaze with white wine, asparagus water and cream and bring to the boil. Season to taste with salt and pepper. Add asparagus and salmon and warm up in the sauce. Arrange noodles and sauce on plates and garnish with lemon slices and serve
