Noodle salad with meat sausage

Ingredients

  • 400 g Noodles (e.g. penne)
  • 7-10 Tbsp salt, white pepper
  • 2-3 (approx. 250 g) Carrots
  • 100 g Mushrooms
  • 1/4-1/2 Head iceberg lettuce
  • 2-3 Spring onions
  • 200 g Pork sausage
  • 2-3 TABLESPOONS oil, 3-4 tablespoons vinegar
  • 1/2 TEASPOON clear broth (instant)
  • 1 pinch Sugar
  • 8 Olives (e.g. black)
  • 7-10 Tbsp Parsley

Directions

    Cook the pasta in plenty of boiling salted water for about 10 minutes. Drain the noodles, rinse and dry them

    Peel or clean and wash the vegetables. Finely dice carrots. Cut mushrooms into slices. Clean, wash and cut salad into fine strips. Cut spring onions into rings. Remove the sausage from the skin and cut into sticks

    Heat the oil. Fry the mushrooms in it. Sauté spring onions and carrots briefly. Deglaze with 1/8 l water and vinegar and bring to the boil. Stir in broth. Season with salt, pepper and sugar

    Mix the pasta, salad, sausage and olives with the carrot-onion marinade and leave to stand briefly. Garnish with parsley

    Drink: apple juice spritzer
