Noodle pan with meatballs

Ingredients

Servings: 4
  • 300 g ribbon noodles (e.g. tagliatelle)
  • 7-10 Tbsp Salt
  • 1 Onion
  • 2 small chilies
  • 600 g Minced beef
  • 1 egg (size M)
  • 3 TABLESPOONS Breadcrumbs
  • 2 TEASPOONS Mustard
  • 7-10 Tbsp Pepper
  • 1 large zucchini
  • 125 g red and yellow cherry tomatoes
  • 4 TABLESPOONS Oil
  • 250 ml cooking cream (7 % fat)
  • 400 ml Vegetable broth
  • 4-5 Tsp Cornstarch
  • 4 TSP Pesto
  • 50 g Parmesan cheese
  • 1 collar Basil

Directions

    Cook the pasta in boiling salted water according to the instructions on the packet. Finally, remove approx. 100 ml of boiling water, drain the pasta, drain, place on a baking tray and mix with the pasta water collected

    Peel the onion and cut into fine cubes. Halve the chillies, remove seeds and cut into fine strips. Knead minced meat, diced onion, chilli strips, egg, breadcrumbs and mustard. Season with salt and pepper. Hack to approx. 20 small balls f

    Clean and wash the zucchini, cut them in half lengthwise, cut them into strips, then cut them into bite-sized pieces. Wash tomatoes, dab dry. Heat 2 tablespoons of oil in a frying pan. Fry the zucchini for 4-5 minutes while turning, season with salt and pepper and remove. Add 2 tablespoons of oil to the hot frying fat, fry meatballs in it over medium heat for about 8 minutes, turning them over, and take them out. Pour out the frying fat from the pan, except for approx. 2 tbsp

    Add the noodles to the pan and fry for 2-3 minutes, turning. Pour cream and stock into the noodles, bring to the boil. Mix the starch with a little water, use it to thicken the simmering sauce slightly. Add meatballs, zucchini and tomatoes, simmer for 2-3 minutes until tomatoes burst open. Stir in pesto. Season to taste with salt, pepper and sugar. Slice parmesan. Wash basil, shake dry, pluck leaves from the stalks. Mix basil into the pasta. Arrange the pasta, sprinkle with parmesan
