Noodle omelette with peas and carrots (snack)

Ingredients

  • 200 g Carrots
  • 200 g Spiral noodles
  • 7-10 Tbsp Salt
  • 150 g frozen peas
  • 1 medium onion
  • 4 Eggs (size M)
  • 200 ml Milk
  • 7-10 Tbsp grated nutmeg
  • 2 TABLESPOONS Oil
  • 2 stem(s) Parsley

Directions

    Peel, wash and cut the carrots into small cubes. Cook pasta in boiling salted water according to package instructions. Cook carrots and peas in boiling salted water for about 5 minutes. Drain everything, rinse with cold water and drain well. Peel and finely chop the onion. Whisk eggs and milk, season with salt and nutmeg

    Heat oil in a coated pan (28 cm Ø). Sauté the onion in it. Put some vegetables aside. Mix pasta and other vegetables and put them into the pan. Fry briefly. Pour egg mixture over it. Cover and allow to set for 12-15 minutes over a mild heat

    Wash the parsley, dab dry and chop finely. Remove the omelette from the pan. Heat the rest of the vegetables in the hot pan briefly. Cut the omelette into pieces. Garnish with vegetables and parsley. Serve with a green salad
