Ingredients

  • 400 g Wheat flour
  • 10 g Durum wheat semolina
  • 12 Egg Yolk
  • 3-4 Eggs
  • 7-10 Tbsp Olive oil
  • 7-10 Tbsp Salt

  • 7-10 Tbsp Salt
  • 1 Bag nero di sepa" (ink)

Directions

    Form the sifted flour and semolina into a hollow on a wooden board.

    Add all other ingredients.

    Knead everything into a smooth dough, starting with the fingertips at the edge. Shape into a body and let it rest.

    Roll out the dough and cut into 1 cm wide strips.

    Hang the pasta on a broomstick to dry.

  6. 6

    Then cook the noodles in salted water al dente.

    Place on a sieve and pour olive oil over it (do not rinse off).
