Mushrooms in lemon thyme oil

Ingredients

  • 500 g small mushrooms
  • 250 g Oyster mushrooms
  • 250 g Shiitake mushrooms
  • 1/2 bunch/pot of thyme
  • 8-10 Tbsp Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 7-10 Tbsp Juice of 1 lemon
  • 7-10 Tbsp untreated lemon wedges

    Clean and grate the mushrooms. Depending on the size, halve or quarter them. Wash thyme and, except for a little bit, pluck

    Heat 4 tablespoons of oil in portions in a large frying pan. Sauté the mushrooms well (shiitake for about 10 minutes), sprinkle some thyme over each and fry briefly. Seasoning

    Sprinkle the whole mushrooms with lemon juice and 4-6 tablespoons of oil, leave to stand for a while. Serve as desired lukewarm or cold with the remaining thyme and lemon. Served with: farmhouse bread or ciabatta
