Mushroom tartar in glass with Parma ham chip

Ingredients

Servings: 4
  • 800 g rosè mushrooms
  • 4 Shallots
  • 3 TABLESPOONS Oil
  • 2 TABLESPOONS Butter
  • 1 collar Parsley and chives
  • 2 discs Parma ham
  • 1-2 TEASPOONS Lemon juice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    Clean and trim the mushrooms. Finely dice the mushrooms. Peel and finely dice shallots. Heat 2 tablespoons of oil and butter in a large pan. Fry the mushrooms in this pan until golden brown, turning several times. Add shallots and fry briefly. Remove from heat and let cool off

    Wash herbs, shake dry. Pluck the leaves from the parsley and chop them finely, except for something to garnish. Cut the chives into fine rolls. Halve the ham slices. Heat 1 tablespoon of oil in a frying pan and fry the Parma ham for about 1 minute on each side. Remove and drain on kitchen paper. Briefly fry the parsley leaves in the oil. Remove and drain

    Mix the herbs into the mushroom tartar. Season to taste with lemon juice, salt and pepper. Divide tartar into 4 glasses. Garnish with Parma ham chips and parsley leaves. Bread tastes good with it
