Multi-fruit cake from tray

Ingredients

  • 2 Organic limes
  • 230 g Sugar
  • 250 g Butter or margarine
  • 1 package Vanillin sugar
  • 4 Eggs (size M)
  • 350 g Flour
  • 1 package Baking Powder
  • 75 ml Buttermilk
  • 2 eyeballs
  • 4 Prunes
  • 100 g Gooseberries
  • 7-10 Tbsp Icing sugar
  • baking paper

Directions

    Wash the limes and grate them dry. Grate the zest of 1 lime and mix with 30 g sugar. Halve the lime and squeeze the juice. Cut 1 lime into thin slices. Mix lime zest and juice, fat, 200 g sugar and vanillin sugar with the whisks of the hand mixer until creamy. Gradually stir in the eggs. Mix flour and baking powder and stir into the egg mixture alternately with the buttermilk. Place on a baking tray lined with baking paper (approx. 25 x 30 cm) and smooth down

    Wash and drain apples, plums and gooseberries. Quarter apples, remove core. Cut quarter into slices. Cut plums in half, stone them and cut them into slices. Clean the gooseberries. Spread fruit and lime slices in strips on the dough and sprinkle with lime sugar. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for approx. 35 minutes. Take out and cool down. Dust with icing sugar before serving
