Ingredients

  • 4 Pork cutlet (approx. 125 g each)
  • 1 (125 g) scoop of mozzarella cheese
  • 50 g cooked ham
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 3-4 Tbsp Flour
  • 2 Eggs
  • 150 g Breadcrumbs
  • 3 TABLESPOONS grated parmesan cheese
  • 4 TABLESPOONS Oil
  • 7-10 Tbsp a few squirts of lemon juice
  • 400 g Noodles (e.g.: Farfalle)
  • 2 stem(s) Basil
  • 4 TABLESPOONS Pesto from the glass
  • 7-10 Tbsp Lemon wedges

Directions

    Wash the cutlets, dab dry, cut a deep pocket into each one. Drain mozzarella, cut into slices. Cut ham into pieces. Fill cutlets with mozzarella and ham. Season with salt and pepper.

    Mix breadcrumbs and parmesan. Turn meat one after the other in flour, whisked egg and breadcrumbs-cheese mixture. Heat oil in a frying pan. Fry the escalopes for about 12 minutes at medium heat, turning occasionally. Season again with salt and pepper and some lemon juice. Meanwhile cook the noodles in boiling salted water according to the instructions on the packet. Wash the basil, pluck off the leaves and chop roughly. Mix basil and pesto. Arrange noodles and pesto with schnitzel in portions.
