Ingredients

  • 750 g Potatoes
  • 7-10 Tbsp Salt
  • 2 Onions
  • 3 Garlic cloves
  • 1 collar Parsley and oregano
  • 4 TABLESPOONS Oil
  • 500 g mixed minced meat
  • 1 TABLESPOON Tomato paste
  • 7-10 Tbsp Pepper
  • 1 pinch Sugar
  • 1 TEASPOON Cinnamon
  • 7-10 Tbsp Sweet peppers
  • 2 (approx. 500 g) Aubergines
  • 5 Tomatoes
  • 30 g Butter or margarine
  • 50 g Flour
  • 1/4 l Milk
  • 1/4 l Vegetable broth (instant)
  • 25 g grated parmesan cheese

Directions

    Wash potatoes thoroughly and cook in boiling salted water for about 18 minutes. Peel and finely dice onions. Peel and finely dice the garlic. Wash parsley and oregano, dab dry and chop coarsely, except for a few oregano leaves for garnishing. Heat 2 tablespoons of oil in a pan and fry the minced meat in it. Add onion, garlic and tomato paste.

    Let it braise for 4-5 minutes. Season with salt, pepper, sugar, cinnamon and paprika. Mix parsley and oregano into the minced meat and remove from the pan. Wash, clean and slice the aubergines, put them on kitchen paper and salt them. Drain the potatoes, rinse with cold water and remove the skin. Cut the potatoes into slices. Heat the rest of the oil in a pan and fry the aubergines in it. Drain on kitchen paper. Clean, wash and slice the tomatoes. Heat the fat in a saucepan, sauté the flour in it and deglaze with milk and broth. Stir in parmesan and season with salt and pepper. Layer potatoes and minced meat in a mould, place aubergines and tomatoes on top in a fan shape and pour sauce over them.

    Heat the rest of the oil in a pan and fry the aubergines in it. Drain on kitchen paper. Clean, wash and slice the tomatoes. Heat the fat in a saucepan, sauté the flour in it and deglaze with milk and broth. Stir in parmesan and season with salt and pepper. Layer potatoes and minced meat in a mould, place aubergines and tomatoes on top in a fan shape and pour sauce over them. Bake in the preheated oven (electric cooker: 200 °C / gas: level 3) for about 40 minutes. Garnish as desired with fresh oregano
