Mini-Rösti with ham chop

  • 100 g Radishes
  • 1/2 bunch Chives
  • 1 (approx. 100 g) thick slice of Westphalian raw ham
  • 7-10 Tbsp Peel of 1 organic lemon
  • 100 g Schmand
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Cayenne pepper
  • 50 g Lamb's lettuce
  • 500 g Potatoes
  • 7-10 Tbsp Nutmeg
  • 1 egg (size M)
  • 1 heaped Tbsp Potato flour
  • 6 TABLESPOONS Oil

Directions

    Clean, wash and very finely dice the radishes. Wash chives, shake dry and cut into fine rolls. Dice ham very finely. Mix the radishes, grated lemon peel, ham and chives, except for a little bit for sprinkling, and stir into the sour cream. Season with salt, pepper and cayenne pepper.

    Clean, wash and drain the lamb's lettuce. Peel, wash and finely grate the potatoes. Season potatoes with salt, pepper and nutmeg. Mix potatoes, egg and potato flour in a bowl. Heat 2 tablespoons of oil in a wide coated pan. Use the potato mixture to fry 4 Rösti one after the other. Drain the Rösti on kitchen paper.

    Put the hash browns on plates. Cut out cams from the ham chop and arrange on the Rösti. Sprinkle with chive rolls and pepper. Garnish with corn salad.
