  • 75 g Sugar
  • 170 g Butter
  • 250 g Flour
  • 3 small Eggs
  • 150 g Sugar
  • 500 g Low-fat curd
  • 1 pck. Vanilla custard powder
  • 1 Organic lemon
  • 1 can(s) Tangerines

    Special kitchen aids: silicone muffin baking tin Preparation: You should take the ingredients out of the refrigerator beforehand so that they reach room temperature when baked. Preheat the oven to 200°C. Measure/weigh and prepare all ingredients. Drain the mandarins in a sieve. Grease the silicone mould well so that the tartes can be easily removed after baking.

    The short pastry: Put the flour, the sugar, the softened butter and the egg yolk into a mixing bowl and mix everything with the mixer until a bound mass is formed.

    Gladly knead the dough with your hands and put it in the fridge. Do not place the dough as a ball, but as a flat form for cooling, this will make it easier to roll out afterwards

    Cheese mixture: Put the egg yolk, separated from the egg white, together with the sugar, the quark, one half of the custard powder and the grated organic lemon rind into a mixing bowl. All ingredients should be stirred together until foamy. The egg white should be kept in a high separate container. When grating the lemon rind, make sure that the bitter white part of the rind is not used.

    Then you can carefully fold the stiff egg white into the curd mixture.

    The tartes: Take the shortcrust pastry out of the fridge and roll it out on baking paper or a mealy surface to a 0.25 cm thick surface. Cut out the pastry with the round moulds or a glass and place it in the silicone moulds.

    Carefully prick small holes in the bottom of the tartes with a fork and then cover them with (2-3) mandarins.

    Finally, fill the tartes with the cheese mixture and place in the oven for baking.

    Lower the temperature to 180 °C and set an alarm clock for 15 minutes. Now you should keep an eye on the tartes and cover them with baking paper if necessary to prevent them from getting too dark. After about 20 minutes baking time in the oven, the tartes should be ready. Check the exact time with the help of a knife tip or a wooden stick.

    According to your taste, you can also refine the cheese tarts with cherries, raspberries, jam or chocolate.
