Menemen - Turkish scrambled eggs with garlic sausage

Ingredients

Servings: 4
  • 3 Tomatoes
  • 3 green peppers
  • 150 g Sucuk (Turkish garlic sausage)
  • 2 small onions
  • 2 TABLESPOONS Butter or margarine
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 8 Eggs
  • 150 g Feta cheese

Directions

    Carve tomatoes crosswise, blanch with hot water, drain and rinse with cold water. Peel skin. Quarter tomatoes, remove seeds and cut flesh into small cubes. Clean the pepperoni, cut lengthwise, remove the seeds and cut the pepperoni into rings. Cut the sausage into pieces. Peel onions and cut into rings

    Heat the fat in a pan and sauté the onions. Add sausage and pepperoni and fry. Add tomato cubes and fry briefly. Season with salt and pepper and keep warm

    Whisk the eggs and season with salt and pepper. Heat a second pan and pour in the eggs. Let them falter at low heat, pushing them together again and again with a spatula. Arrange the scrambled eggs in a bowl. Add the sausage and vegetable pan and crumble the feta cheese over it. Flatbread tastes good with it
