Meatball sate with peanut sauce and Chinese cabbage salad

Ingredients

Servings: 4
  • 1 Bread roll (from the previous day)
  • 2 Onions
  • 1 Garlic clove
  • 1 pinch of ginger
  • 600 g mixed minced meat
  • 1 egg (size M)
  • 2 TABLESPOONS Soy sauce
  • 7-10 Tbsp Pepper
  • 4 TABLESPOONS Oil
  • 8 TABLESPOONS Peanut cream
  • 100 ml Vegetable broth
  • 7-10 Tbsp Salt
  • 1 TABLESPOON Peanut kernels
  • 1 (approx. 500 g) Head Chinese cabbage
  • 2 Spring onions
  • 1 can(s) (234 ml) Pineapple in slices
  • 2 TABLESPOONS Wine vinegar
  • 1 chili pepper
  • 8 wooden skewers

Directions

    Soak rolls in water. Peel and finely dice 1 onion, garlic and ginger. Knead minced meat, pressed bread roll, garlic, onion, ginger and egg, season with soy sauce and pepper.

    Form approx. 24 small balls from the mass. Heat 1 tablespoon of oil in a frying pan. Fry the meatballs for about 6 minutes at medium heat, take them out and let them cool down a bit. Peel 1 onion and chop finely.

    Heat 1 tablespoon of oil in a saucepan. Sauté the onion in it. Add peanut cream and stock, bring to the boil while stirring and season to taste with salt and pepper. Pour into a small bowl. Chop the peanut kernels and sprinkle over them.

    Clean the cabbage, cut it in half, cut out the stalk. Cut cabbage into strips, wash and drain. Clean, wash and cut spring onions into rings, add to the cabbage. Drain the pineapple and collect the juice.

    Cut the pineapple into small pieces. Mix 4 tablespoons pineapple juice, vinegar and 2 tablespoons oil. Season to taste with salt and pepper. Clean and wash the chilli pepper, cut lengthwise and remove seeds. Chop the chilli pepper finely.

    Add to the pineapple marinade. Pour the marinade over the cabbage. Put 3 meatballs on each skewer. Arrange the meatballs with cabbage salad and peanut sauce on a plate.
