  • 3 Federation (150 g each) Spring onions
  • 200 g cherry tomatoes
  • 1 (60 g) bag of pine nuts
  • 4 Stem(s) Thyme
  • 4 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 75-100 g Sugar
  • 100 ml Red wine vinegar
  • 7-10 Tbsp Pepper
  • 50 g Parmesan cheese

Directions

    Leek onions clean, wash, depending on size possibly halve. Clean, wash and halve the tomatoes. Roast pine nuts in a pan without fat until golden brown. Wash the thyme, pluck the leaves from the stalks. Heat the oil.

    Sauté the spring onions in it in portions while turning, salt a little and put aside. Melt 75 g sugar in hot oil until golden brown. Deglaze with vinegar and 100 ml water. Season with salt, pepper and thyme. Simmer on low heat for 5 minutes. Swirl the tomatoes briefly. If necessary, sweeten with the remaining sugar. Arrange spring onions with the marinade. Sprinkle with pine nuts and sprinkle with parmesan.
