Ingredients

  • 40 g Walnut kernels
  • 70 g pitted dates
  • 1 Pear or apple
  • 280 g Flour
  • 100 g Wholegrain oat flakes
  • 100 g Sugar
  • 2 TEASPOONS Baking Powder
  • 1 TEASPOON ground cinnamon
  • 1⁄4 Tsp Nutmeg
  • 1⁄2 Tsp Baking soda
  • 1⁄2 Tsp Salt
  • 50 g Butter
  • 250 g Buttermilk
  • 125 ml Maple syrup
  • 1 egg (size L)
  • 1 TEASPOON Sugar beet syrup

Directions

    Roughly chop the walnuts. Finely chop dates. Peel, quarter, core and grate the pear. Butter a 12-piece muffin tin

    Mix flour, oat flakes, sugar, baking powder, cinnamon, nutmeg, baking soda and salt in a bowl. Melt butter and mix it hot with buttermilk, maple syrup, egg and syrup. Add to the dry ingredients and mix everything briefly until all ingredients are just mixed

    Briefly fold in the walnuts, dates and pear. Spread the dough evenly on the muffin tin. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for 18-20 minutes. Make a cooking test with a wooden skewer
