Ingredients

  • 2 can(s) (à 314 ml) Mandarin oranges
  • 110 g Cornstarch
  • 1/4 l Milk
  • 3 packages Vanillin sugar
  • 1 TABLESPOON + 75 g sugar
  • 3 Eggs (size M)
  • 50 g Flour
  • 20 g + 1-2 tablespoons cocoa powder
  • 1 heaped Tsp baking powder
  • 200 g Whipped cream
  • 1 package Cream stabiliser
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp Cling film
  • baking paper

Directions

    Drain the mandarin oranges and collect the juice (approx. 1/4 litre). Mix 150 ml juice and 60 g starch. Heat the rest of the juice, milk, vanillin sugar and 1 tablespoon of sugar in a pot while stirring. Stir in starch and bring to the boil while stirring. Let it boil for about 1 minute. Put the pudding immediately in a bowl and cover the surface with foil. Let it cool down (approx. 1 1/2-2 hours) .

    Separate eggs. Beat the egg whites and 3 tablespoons of cold water with the whisk of the hand mixer until stiff and finally add 75 g of sugar. Beat the egg yolks one after the other. Mix flour, 50 g starch, 20 g cocoa and baking powder, sieve onto the egg foam and fold in carefully. Put the mixture on a baking tray (approx. 39 x 32 cm) lined with baking paper and smooth it down. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: stage) for approx. 10 minutes.

    Place a clean tea towel on a work surface and sprinkle with some sugar. Turn the finished sponge cake immediately onto the tea towel and remove the baking paper. Let the sponge cool down (now measures approx. 27 x 36 cm). Cut the sponge in half crosswise (in 2 plates of 27 x 18 cm) and place one plate on a board. Whip the cream and cream firming agent until stiff. Mix the cold pudding with the whisks and fold in the cream. Finally, carefully fold in mandarins and spread the mixture on the prepared base.

    Cover with the second base, press down lightly and smooth the edges. Put milk slices in a cool place for about 3 hours. Cut the Milk Slices in half lengthwise (in 2 strips of 27 x 9 cm) and cut each strip into 7 slices of 3.5 - 4 cm width. Serve dusted with 1-2 tablespoons of cocoa
