Mallorcan chicken soup with almonds (Sopa Boba)

Ingredients

Servings: 8
  • 1 collar (approx. 600 g) Soup greens
  • 2 Onions
  • 2 Garlic cloves
  • 4 dried tomatoes
  • 4 TABLESPOONS Oil
  • 2 Chicken breasts
  • 300 g Bacon (with rind)
  • 7-10 Tbsp Salt
  • 3 discs farmhouse bread
  • 200 g crushed almonds
  • 7-10 Tbsp Pepper

Directions

    Soup greens clean or peel, wash and roughly dice. Peel onions and garlic, cut into large pieces. Cut tomatoes into pieces. Heat 2 tablespoons of oil in a large pot. Fry the onions, garlic and soup greens for about 5 minutes until light brown, turning them over

    Wash chicken breasts thoroughly. Place the chicken and ham on the soup vegetables. Add 2-2 1/2 litres of cold water and 2 tsp. salt (meat should be covered). Bring to the boil and simmer at low heat for about 1 hour. Remove any foam that develops in between with a skimmer

    Dice bread. Heat 2 tablespoons of oil in a frying pan. Fry the bread for 4-5 minutes while turning it, season with a little salt and take it out

    Take out the meat. Puree remaining vegetables in the pot. Stir in almonds, bring to the boil. Remove chicken meat from skin and bone, dice. Cut rind from bacon. Cut ham into bite-sized pieces. Add meat to the soup. Season soup with salt and pepper and serve with croutons
