Heat sugar, 5 tablespoons of water and lemon juice in a pot at medium temperature. Let it caramelize while stirring occasionally. When the sugar starts to turn a little colour, lower the temperature.
Colour with food colouring until the desired shade is achieved. Set caramel aside and stir occasionally.
Wash the apples, grate them dry and put a wooden skewer into each one. Line a baking tray with baking paper. When the caramel begins to thicken, hold the apples over it and let the caramel run over the apples with a spoon.
Drain the apples, put them on the baking paper and let them cool down.
