Ingredients

  • 1 TEASPOON Dry yeast
  • 1 TEASPOON Sugar
  • 250 g flour + something to work with
  • 7-10 Tbsp Salt
  • 5 TABLESPOONS oil + something to brush on
  • 1 red onion
  • 1 Breakfast cucumber
  • 1 ripe mango
  • 100 g cherry tomatoes
  • 4 TABLESPOONS Lime juice
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Chili Flakes
  • 4 Jalapeños
  • 1 Garlic clove
  • 2 ripe avocados (e.g. Hass variety)
  • 4 Chicken fillets (approx. 125 g each)
  • 2 TEASPOONS Precious sweet paprika powder
  • 250 g sour cream
  • baking paper

Directions

    For the tortilla pies, stir yeast and sugar into 150 ml of lukewarm water. Let it rest for about 5 minutes until the yeast water throws small bubbles. Put flour and 1⁄2 TL salt in a large bowl. Press a depression in the middle.

    Pour yeast water and 1 tablespoon of oil into the well. Knead first with the dough hooks of the mixer, then quickly with your hands to a smooth dough. Cover and leave to rise in a warm place for about 1 hour.

    For the salsa, peel and finely dice the onion. Wash the cucumber, cut in half lengthwise, remove seeds with a tablespoon and dice finely. Peel the mango and cut into slices from the stone. Dice the flesh. Wash and dice the tomatoes.

    Mix everything with 2 tablespoons lime juice and 2 tablespoons oil. Season to taste with salt, pepper and chilli. For the guacamole, clean and wash 2 jalapeños, cut in half lengthwise, remove seeds and chop coarsely. Peel garlic and chop finely.

    Halve the avocados, remove the stone, remove the flesh from the skin with a spoon and mash with a fork. Stir in jalapeños and garlic. Season to taste with 2 tablespoons lime juice and salt.

    Knead the tortilla dough again until smooth. With lightly floured hands, form approx. 8 balls of the same size, roll out each ball on a floured work surface to form thin flat cakes (approx. 20 cm Ø) and stack them on top of each other (with baking paper between the individual cakes).

    Cover the stack with a damp cloth. Heat a coated pan to high temperatures. Fry the pancakes in it for about 1 minute one after the other until they are golden brown (until they form bubbles). Brush the top with a little oil.

    Turn the tortilla, fry the other side for about 1 minute and take it out.

    Wash the meat, dab dry and cut into approx. 2 cm thick strips. Mix with 2 tablespoons of oil, pepper and paprika in a bowl. Heat up a large pan. Fry the meat for about 8 minutes while turning.

    Season with salt. Clean and wash the rest of the jalapeños and cut them crosswise into thin slices. Fill tortillas with guacamole, meat and salsa. Sprinkle with jalapeños and cover with sour cream. For this, mommies' homemade fries are a real treat.
