Lime ricotta cream with red wine-strawberries

Ingredients

  • 2 sheets Gelatine
  • 1 Organic Lime
  • 50 g Sugar
  • 100 g Whipped cream
  • 125 g Ricotta
  • 1 Protein (size M)
  • 250 g Strawberries
  • 1 TABLESPOON Icing sugar
  • 50 ml Red wine

Directions

    Soak gelatine in cold water. Wash the limes and grate half of the peel. Halve the lime and squeeze the juice. Boil up lime juice, 2 tablespoons of water and sugar. Remove the stock from the stove, allow to cool slightly and dissolve the squeezed gelatine in it.

    Whip the cream until stiff. Mix half of the cream, lime grated and ricotta. Beat the egg whites until stiff, gradually adding the lime syrup. Fold the beaten egg whites and the remaining cream into the ricotta cream.

    Pour cream into 4 glasses (approx. 200 ml each) and chill for at least 2 hours.

    Wash and clean the strawberries and, depending on size, cut them in half or quarters. Mix the strawberries with icing sugar and red wine and leave to stand for about 1 hour. Spread the strawberries on the cream and serve.
