Peel and wash the carrots, cut them in half lengthwise and cut them into slices at an angle. Wash the tomatoes. Peel onions and cut into rings.
Toast bread in a toaster. In the meantime heat 2 tablespoons of oil in a large frying pan. Fry the carrots for about 8 minutes. Add tomatoes and onions after about 4 minutes. Season with salt and pepper. Drain capers and olives and add.
Pluck the bread into pieces and fold into the vegetables. Mix with vinegar and 4 tablespoons of oil. Crumble the feta and sprinkle over it, serve.
