Lamb chops with apple sauce

Ingredients

Servings: 2
  • 400 g Potatoes
  • 7-10 Tbsp Salt
  • 1 Onion
  • 2 small sour apples
  • 3 Stem(s) Thyme
  • 4 Lamb chops (approx. 80 g each)
  • 1 TABLESPOON Butter or margarine
  • 3 TABLESPOONS white balsamic vinegar
  • 150 ml Lamb stock
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Applesauce
  • 2 TABLESPOONS Olive oil
  • 7-10 Tbsp fresh herbs

Directions

    Peel and wash the potatoes and cook in boiling salted water for 15-20 minutes. In the meantime, peel onion and cut into slices. Wash, quarter and core apples. Cut the fruit flesh into slices as well. Wash and chop the thyme.

    Wash chops and dab dry. Melt the fat. Fry onion and apple slices for about 4 minutes. Deglaze with vinegar and stock. Season with salt, pepper and thyme. Add applesauce and cook for another 5 minutes. In the meantime heat up olive oil in another pan. Fry the chops for about 7 minutes while turning. Season with salt and pepper. Season the apple sauce again.

    Add applesauce and cook for another 5 minutes. In the meantime heat up olive oil in another pan. Fry the chops for about 7 minutes while turning. Season with salt and pepper. Season the apple sauce again. Serve with lamb chops and boiled potatoes. Serve garnished with fresh herbs
