Ingredients

  • 7-10 Tbsp 3o g yeast
  • 80 g Sugar
  • 375 g Flour
  • 1 egg (size M)
  • 1 pinch Salt
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 60 g Butter or margarine
  • 150 ml Milk
  • 1.5 kg Plums
  • 50 g Sugar crystals
  • 2 (200 g each) Cup of whipped cream
  • 1 TEASPOON Cinnamon
  • 7-10 Tbsp Grease

Directions

    Mix yeast and 50 g sugar in a cup. Put flour, egg, salt and lemon zest and liquid yeast in a mixing bowl. Melt the fat, add the cold milk and add both to the remaining ingredients.

    Work into a smooth yeast dough with the dough hooks of the hand mixer. Cover and leave to rise in a warm place for about 30 minutes. After 15 minutes knead through briefly. In the meantime, wash the plums, dab dry, halve and stone them.

    Cut a little at the tips. Roll out the yeast dough evenly on a greased baking tray and cover with the plums. Bake in a preheated oven (electric: 200 °C/ gas: level 3) for 25-30 minutes.

    Remove from the oven, sprinkle with half of the hail sugar and allow to cool. Cut into 20 pieces before serving. Sprinkle the remaining sugar crystals on top. Whip cream and remaining sugar until stiff.

    Stir in cinnamon and serve with the cake.
