Ingredients

  • 4 m.-size Eggs
  • 250 g Sugar
  • 200 g crushed almonds
  • 100 g Flour
  • 200 ml Sunflower oil
  • 200 ml Orange juice
  • 300 g Carrots
  • 1 Organic lemon
  • 1 pck. Baking Powder

Directions

    Preparation: All ingredients should be taken out of the refrigerator before baking so that they can reach room temperature. For simplicity, you can weigh all the ingredients and separate the eggs. Wash the carrots and grate them into fine shavings. Preheat the oven to 180°C circulating air.

    Cream the egg yolk with the sugar.

    Mix baking powder, flour and almonds together.

    Add the oil, orange juice and almond flour mixture to the egg yolk and sugar. Mix everything together.

    Beat the egg white until stiff and fold into the mixture.

    Also fold the grated carrots into the dough and season and refine everything with the grated lemon peel and nutmeg.

    Place the dough in a greased casserole dish and place in the oven for baking.

    Do not forget to set an alarm clock. After 30 minutes keep an eye on the cake and cover it with baking paper if necessary to prevent the surface from turning brown. And before taking it out of the oven, make a test with a wooden stick or knife. When cooled down, turn out of the tin, cut into cubes and enjoy.

    You can also replace the flour or ground almonds with ground hazelnuts.
