Italian meat loaf with ham chips

Ingredients

  • 100 g dried tomatoes
  • 1 Onion
  • 2 Garlic cloves
  • 1 kg mixed mince
  • 1 TEASPOON dried Italian herbs
  • 1 TABLESPOON Mustard
  • 1 Egg
  • 150 g Whole milk yoghurt
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sweet peppers
  • 250 g Mozzarella
  • 50 g Arugula (rocket)
  • 10 discs Bacon
  • 7-10 Tbsp Cling film
  • baking paper

Directions

    Chop the tomatoes into small pieces. Peel onion and garlic and chop finely. Knead minced meat, tomatoes, onion, garlic, herbs, mustard, egg and yoghurt. Season with 1 tsp salt and pepper. Finely dice the mozzarella.

    Press the chopping mass on foil to a flat square (approx. 24 x 24 cm). Spread the mozzarella on top, leaving a 2 cm wide edge. Roll up the mince using the foil. Place it with the seam facing down on a baking tray lined with baking paper.

    Score the surface several times. Roast in the preheated oven (electric cooker: 175 °C/circulating air: 150 °C/gas: see manufacturer) for approx. 1 hour.

    Clean, wash and drain the arugula well. Fry bacon in a pan without fat until crispy. Arrange meat loaf. Sprinkle with arugula and ham chips. Serve with tomato sauce.
